Want to cut down on carbs – this ‘cauliflower-rice’ is a great alternative.


1 large head cauliflower, trimmed, cut into florets
1 tablespoon coconut oil or olive oil
2 small red chillies, seeded, thinly sliced
2cm piece fresh ginger, peeled, finely chopped
2 garlic cloves, finely chopped
2 tablespoons desiccated coconut
4 green onions, thinly sliced
1 carrot diced
1 cup of peas
1 zuchinni diced
Extra sliced green onion, to serve
Salt Flakes, to season
Soy sauce


  1. Using a food processor, process cauliflower florets until very finely grated.

  2. Heat coconut oil in a large, deep frying pan over medium heat. Add chilli, ginger and garlic, spring onions Cook, stirring, for 2 minutes then add, all vegetables and desiccated coconut. Cook, stirring occasionally, for 20 minutes or until cauliflower is tender and light golden.

  3. Stir in green onions and soy sauce , season well with salt and pepper.
