pineapple and coconut loaf

The combination of pineapple and coconut think summer and pina coladas,  very simple to make and a real crowd pleaser.


125g butter
1 cup (125g) brown sugar
1 teaspoon vanilla extract
2 eggs
1 ½ cups (225g) plain (all purpose) flour
1 teaspoon baking powder
½ teaspoon bicarbonate (of baking) soda
1 ¼ cups (60g) sweetened coconut flakes
¼ cup (90g) golden syrup
1 ½ cups (125g) crushed pineapple, drained
Vanilla flavoured yoghurt to serve


Preheat oven to 160oC (325oF). Place the butter, sugar and vanilla in an electric mixer and beat until pale and creamy.  Gradually add the eggs, beating well after each addition. Sift in the flour, baking powder and bicarbonate of soda. Add the coconut and golden syrup and mix to combine. Fold through the pineapple and spoon the mixture into a lightly greased 30cm x 10cm loaf tin lined with non-stick baking paper. Bake for 60-65 minutes or until cooked when tested with a skewer. Allow to cool in the tin. Serve with vanilla yoghurt. Serves 6-8

    Cooked this on the weekend, for afternoon tea when some of my friends came around. Everybody loved it, simple recipe and will definitely make again.
